The Canarian chef Diego Schattenhofer presented an innovative proposal at Madrid Fusión 2024: edible perfumes inspired by the landscapes of Tenerife.
In collaboration with the fragrance house Scentmate by Dsm-Firmenich, Schattenhofer has created two perfumes: “El Pinar” and “Medianías de las Islas”. These perfumes, made with natural, biodegradable ingredients, are designed to be applied to the skin and awaken emotions in the diner before tasting the dish.

How do they work?
Edible perfumes act through smell, a sense directly connected to the limbic system, responsible for emotions. When the perfume is applied to the skin, certain areas of the brain are activated, generating feelings of happiness, relaxation, wellbeing and joy.
What benefits do they bring?
Edible perfumes can bring a new dimension to the dining experience. They allow the diner to connect with the dish at a deeper level, not only through taste, but also through smell. They can also help enhance the flavours and aromas of the food.
In which dishes can they be used?
Edible perfumes are versatile and can be used across a wide variety of dishes. Schattenhofer has integrated them into his tasting menu, using them to complement dishes such as the “Carpaccio de cabrito con mojo de cilantro” (kid carpaccio with coriander mojo) or the “Cherne con papas arrugadas y mojo verde” (wreckfish with papas arrugadas, the Canarian salt-crusted potatoes, and green mojo).
What is the future of edible perfumes?
This innovative proposal is still in development, but it has great potential to revolutionise gastronomy. Schattenhofer is already working on new perfumes inspired by other landscapes of the Canary Islands and other ingredients.
