Canarias Gourmet, the digital gastronomy newspaper, has published its TopTen of fine dining in Tenerife for 2026 and places Taste 1973 at number 1. It matters to us for what the profile itself explains: this ranking does not order historical records, but the projects that today express the island’s fine cuisine with the most force.

The profile describes Taste 1973 as a project that turns Canarian territory into a field of culinary research, led by Diego Schattenhofer at the Hotel Villa Cortés, launched in 2019 and backed by Gastrosinapsis and an adjoining R&D&i laboratory. It notes that the restaurant holds a Michelin star and a Repsol Sun, and details the two tasting menus currently on offer: Roque Guincho, 135 euros, and Roque de Arona Hío, 160 euros. It values the treatment of fish, the maturations and the work of concentrating flavour, flags as a risk that the narrative might compete with the culinary reading, and mentions the recent renovation of the space.
The outlet is blunt about the meaning of the ranking: “No. 1 does not mean that Taste 1973 has the track record of El Rincón de Juan Carlos or its accumulation of accolades, and that is precisely the key to this ranking”. And it closes with: “We are ranking which projects express the fine dining of Tenerife most forcefully in 2026, not who holds the most extensive historical record”. Reading it with that small print in mind is, for us, the best way to receive it.
On 21 September, Diario de Avisos picked up the ranking under the headline “The 10 restaurants leading the new gastronomic TopTen of the province of Santa Cruz de Tenerife”. The newspaper explains that the list is part of the Guía de Restaurantes de Canarias 2026 from Canarias Gourmet, which brings together nine projects from Tenerife and one from El Hierro, and places Taste 1973, at the Hotel Villa Cortés in Playa de Las Américas, at the very top, ahead of El Rincón de Juan Carlos and San Hô. It reports that Canarias Gourmet especially highlights how the restaurant “has turned Canarian territory into a subject of culinary research”, and sums up that the proposal draws on the produce of the Islands and on research that reaches back into the food history of Tenerife, with a dedicated research and development space working on concepts linked to the pre-Hispanic gastronomy of the Canary Islands.
Since we opened in January 2019 at the Hotel Villa Cortés we have worked with the conviction that Canarian gastronomy still has much to tell, and that it has to be sought out in the laboratory just as much as in the market. We receive the recognition with gratitude and with the calm of knowing that the interesting part still lies ahead.
