Taste 1973 – Playa de las Américas - a restaurant in the MICHELIN Guide Spain

The official entry for Taste 1973 in the MICHELIN Guide Spain credits our house with a MICHELIN Star. We’re delighted to share it now that the restaurant also appears among the winners of the Repsol Guide 2026.

The entry describes Taste 1973 as a restaurant at the Villa Cortés hotel led by the Argentine chef Diego Schattenhofer, who has been in the Canary Islands for more than two decades. The inspectors highlight a creative cuisine that celebrates the island’s history, with a multidisciplinary team — marine biologists, neurologists, historians — recovering Guanche culinary roots, and point to the fondness for matured fish as a clear point of difference. We opened in January 2019, and the entry records the phrase the proposal uses to define itself: “we don’t create recipes, we create emotions.”

The entry also covers our two tasting menus, Roque Guincho and Roque de Arona Hío, with dishes such as the Arroz marino de carabineros (seafood rice with scarlet prawns) or the Thunnus thynnus, and the information cards that accompany each dish to explain what the produce is and which island it is dedicated to. And it adds something that gives us particular pleasure: “Great Canarian cheese trolley with more than 50 varieties!” We take our time over that part of the island’s larder in the aboriginal Canarian cheese.

The island context was summed up by Abocados.es on 27 November 2025, the day after the announcement: Tenerife now has eleven Michelin stars, a historic record for the island, and the newly arrived star is that of El Taller de Seve Díaz, the only winner not housed in a five-star hotel. In the list of one-star restaurants, the piece cites “Taste 1973, by Diego Schattenhofer, at the hotel Villa Cortés, in Arona,” alongside Donaire, NUB, Il Bocconcino, San Hô and Haydée by Víctor Suárez.

As for the Repsol Guide, El Nacional · La Gourmetería published the full list of winners of the 2026 edition on 16 February 2026, following the gala held at the Palau Firal i de Congressos in Tarragona, and Taste 1973 (Arona) appears in the Canarian one-Sun block. Our first Sun arrived in the Repsol Guide of 2023; the Turismo de Tenerife corporate blog referred to the house in September 2026 as a restaurant recognised with a Michelin star and a Repsol Sun.
